After many dinners offering spicy selections, we’ve found many adventurous people wanted to experience the excitement of trying exotic cuisines with interesting wines, even though they didn’t enjoy the super spicy hot selections.. Through trial and error we began selecting vegetarian entries and or non spicy entries along with the spicy entries. People could now enjoy the adventure without worrying weather or not they thought they could handle the heat. Others learned that they could for the first time handle a much higher heat level than previously thought when paired with the proper wine. Other food combinations besides wine combinations also heightened and enhanced people’s tolerance for hot spices. I’ve tried to chose selection with in each course that offer either a vegetarian or seafood alternative for each meat selection when ever possible. Besides dietary concerns many of the vegetarian selections are chosen because they ad layering of flavors to the course which make the course more interesting.
